Before I'm going to show off with this recipe, I have to admit it was my mom who invented these festive chocolate coconut balls.
Since I am vegan, she always tries to make me some goodies with the holidays.
So they were not only very delicious, they were made with a loads of mommy love as well! And they look kinda Christmassy, don't you think?
Cruesli.. Granola.. rawnola.. Whatever the difference is; this breakfast trend has flown over from the United States to Europe. AND IT SMELLS SO GOOD!
When I started making this recipe, my intention was to make a big pavlova pie. "It can't be that hard! It's just a base of meringue, whipped cream with fruits, granola and mint leaves on top. What could go wrong?" I thought courageously. Well, let me tell you; a lot could go wrong.
So for the not-so skilled kitchen princesses among us, including myself, I made a quick and much easier recipe: Lena Mess, named after the well-known dessert Eton Mess. (Ironically my experience suited this name too well)
Chocolate. Who does not love it?! Chocolate can always make me happy!
We all know this isn't only because of its delicious taste.
Chocolate affects your brain, so it can have emotional and physical benefits!
Chocolate contains a variety of chemicals some of which make us feel good. Actually it contains an amino acid from which dopamine is derived. Dopamine makes us feel happy and content, theobromine which give a boost of energie along with calming effect, and caffeine which stimulates allertness. Chocolate may also boost serotonin levels that help us to feel relaxed.
Let’s face it, it also tastes really good and that alone can make us feel good at least temporarily.

Spring – The season my heart starts to beat faster. Spring brings light and boosts my energy.
I love these little moments of happiness; Open windows and the fresh smell of fresh air inside the house. It makes me happy when days get longer, but they feel shorter because there are so much more fun things to do! It brings hope that there will be warm times again, and after a cold winter I'm always longing for warmer times!!
Spring is the season you can day-dream about summer.. and when you close your eyes, you might accidentally forget the present..
